Healthy-ish Rice Krispy Treats

As a kid snackage was a must. One of my personal favorite snacks growing up was rice Krispy treats. Not only were they an easy grab and go snack but they were delicious. With the combination of the gooeyness of the marshmallows and the snap crackle pop of the rice krispies you couldn’t go wrong. They were definately one of the ultimate grab and go snacks of my childhood.

The one downside rice krispies is that much like a lot of the snacks we grew up on they were full of sugar. So while they are delicious they just aren’t that great for you. Due to this i came up with this healthyish rice krispy treat recipe. It contains all the things that are good about rice krispy treats but without all the sugar. These healthyish rice krispy treats also have only four ingredients and marshmallows are not one of them. Yep you read that right there are no marshmallows in this recipe. The only ingredients in these are as follows:

  • Raw Honey: I prefer the brand really raw honey. Its unprocessed and therefore retains all of its nutritional value including all the goodness the bee put in it.
  • Coconut Butter/ Manna: Coconut butter also know as coconut manna is essentially organic pureed coconut flesh. Coconut butter combined with the honey are the binders that holds these treats together.
  • Vanilla Extract: My preferred brand is simply organic but McCormick works great too.
  • Cinnamon: Adds a dash of warm cinnamon flavor

Once you have all the ingredients these rice krispy treats are super easy to make. First You’ll need the following items:

  • 13 x 9 Inch pan
  • Sauce pot
  • Rubber Spatula
  • Whisk
  • Parchment paper
  • Non Stick Spray
  • Large Bowl

You start by first preparing the pan you intend to make them in with parchment paper ans cooking spray. The next step is to mix all your dry ingredients. After those two steps are done the next thing to do is melt your coconut butter and honey in a pot on medium high heat then whisk to combine. Once you melt the wet ingredients remove from heat and whisk in vanilla. Carefully pour the wet ingredients over the dry ones and mix until dry ingredients are completely coated. Quickly pour mixture into your prepared pan and press into an even layer. Let it cool completely. Once set cut into twelve even squares and enjoy immediately or store in refrigerator.

Ingredients

Scale
  • 9 Cups Rice Krispies
  • 1 Cup Honey 
  • 1 Cup Coconut butter
  • 1/2 Tablespoon Cinnamon
  • 1 Tablespoon Vanilla extract

Instructions

  1. Line a 9 X 13 in baking pan with parchment paper  and spray any exposed sides with non stick spray
  2. In a large bowl add the dry Ingredients and set aside
  3. In a pot add coconut butter & honey
  4.  Place pan on stove on medium high heat until its melted whisking to combine
  5. Remove from heat and whisk in vanilla
  6.  Working quick  and carefully add liquid mixture to the dry mix and stir until all the dry mix is completely coated
  7.  Quickly shape into baking pan and let cool completely (see notes)
  8. Once it’s set cut it into 12 squares and enjoy

Notes

  • I found the easiest way to mold into pan was to cute a piece of parchment paper the size of the pan and place it on top the mixture then use your hand to press it evenly into the pan.
