Easy homemade strawberry ice cream


Ingredients

  • 2 Cups Heavy Whipping Cream
  • 1 Can Sweetened Condensed Coconut milk
  • 1 Cup Honey
  • I cup Chopped Strawberries
  • 1 Teaspoon Strawberry Extract

Instructions

  1. Begin by making the strawberry syrup.
  2. Add the strawberries and honey to the sauce. Place on the stove at medium-high heat and stir until the honey has melted.
  3. Let simmer until the strawberries are soft enough to mash. Mash the strawberries and let the sauce simmer until it reduces by half.
  4. The mixture will be thicker and darker. Remove from stove and carefully using a hand mixer, blender, or food processor mix until smooth.
  5. Once smooth strain the mixture through a fine-mesh strainer to catch the remaining seeds or unblended pieces.
  6. Let the syrup cool completely.
  7. Once cool add whipping cream, condensed coconut milk, and strawberry syrup to a bowl.
  8. Using a mixer whisk until the mixture forms soft peaks.
  9. Pour mixture into the bowl and let freeze until firm enough to scoop.
