How to Make Conversation Hearts Ice Cream Sandwiches
Begin by placing two strips of freezer pare in one of the sheets pans. One strip should be horizontal and one vertical. Add the ice cream to the lined pan and Place in the freezer covered with plastic wrap until firm. In the measuring glass add the butter and melt in the microwave. Once melted add the instant coffee and stir until most of the granules have dissolved. Strain butter mixture into a different measuring cup and heat in the microwave for an additional 30 seconds. Add the cocoa powder to the mixture and whisk until smooth and, then set aside.
In a large bowl mix together all the dry ingredients. To the cocoa mixture add the egg and whisk to combine. Add the wet ingredients to the dry and mix until combined. Wrap cookie dough in plastic wrap and place in freezer or fridge until firm. Roll out the cookie dough and cut with your heart-shaped cookie cutter. Using your stamping tool stamp the sayings into the cookies. Bake the cookies at 300° F for 14 minutes. Remove the cookies from the oven and let them cool completely.
On the second sheet pan a line with one piece of freezer paper. Add cooled cookies faced down on the sheet. Remove firm ice cream from the freezer and cut it with the same cookie-cutter used for the cookies. Place cut ice cream on one cookie and top with another cookie. Once you’ve assembled all the sandwiches cover the pan with plastic wrap and place it in the freezer till ice cream has become firm again. Enjoy.
