How to Make Chili Cheese Fries
Chili
Place your pan on the stove on medium high heat. Dice your onion and peppers and add them to your pan with some oil. Sauté them until their slightly charred. Add minced garlic and stir for a minute. Add the meat and break it up as it begins to cook. Cook meat until it just starts to brown.
While the meat is cooking prepair the beans and tomatoes. Purée the diced tomatoes in a blender until smooth set aside. Optionally leave tomatoes diced and combine with an additional can of tomato sauce. Pour the bean into a fine mesh strainer and strain liquid. Rinse beans with water until all the packaging liquid is gone. Add beans, tomatoes, and chili spice packed to meat mixture. Stir then let simmer for 5 minutes stirring occasionally. After 5 minutes remove from heat and set aside.
Waffle Fries
Preheat the oven to 425°F. Begin mixing the starch, salt, pepper, and fry seasoning in a small bowl and set it aside.
Prepare your potato by unwrapping it and scrubbing it throroughly with a veggie brush. Dry the potato with a napkin and set aside. Grab your mandolin and place it on top a large bowl that comfortably fits the madolin. Grab your potato make your first slice cutting of the tip of the potato. Turn the potato 90 degrees and make another slice and you should have your first waffle fry. Turn it 90 degrees again and make another slice. Continue turning 90 degrees before making each slice until potato is completely sliced. Be careful as the potato gets smaller as mandolins are very sharp.
Once the potato has been cut place them on a payment paper lined baking sheet in a single layer. Coat one side in oil then spices. Flip the fries and coat the other side with oil then spices. Place in oven and flip fries halfway through cooking time. To get them extra crispy remove them from oven and place in air fryer at 400 degrees flipping frequently until they reach the desired crispness.
Chili Cheese Fries
To assemble the chili cheese waffle fries begin by placing some of the waffle fries onto a plate. Optionally you can layer them in a baking pan. Top the fries with the chili and then top with Colby jack cheese. If using a plate place in the microwave for 20 seconds to melt the cheese. If you used a baking pan then bake at 350 for 5 minutes. Serve warm and enjoy.
