How to Make Pretzel Wrapped Hotdog Bites
Pretzel Dough
Pour ½ cup of the water and the honey in the bowl off a stand mixture. Sprinkle yeast into water and let it sit undisturbed for 5 minutes. While yeast is proofing mix salt and flour in a separate bowl. After 5 minutes with paddle attachment mix yeast mixture till combined. Pour flour into bowl with the yeast mixture and attach dough hook. Begin mixing slowing adding the remaining water. Knead dough for 10 minutes with dough hook. Place the dough in a lightly oiled bowl and let rise in a warm place for 1 hour.
Hotdogs/ Bacon
While the dough is rising prepair the bacon and hotdogs. For the hotdogs cut each hotdog in half and then cut each half in half this will give you 4 pieces per hotdog. Set them aside. Heat a large pan to medium high heat. Remove bacon from package spray each side with olive oil spray and season with smokehouse maple seasoning. Cook bacon until fully cooked but not crispy. Let the bacon cool then slice into 4 strips.
Assembling The Bites
Prepair a large baking pan by line it with parchment paper. Dust with a flour set aside. Turn dough out on floured surface. Cut it in half and then each half in half. Take 3 of the pieces and cover with a damp cloth. Cut the 4th piece into smaller pieces and roll each piece into a ball. Place all but one of the balls ilunder a damp cloth. Take one ball and roll it into a log. Take one hotdog piece and wrap in a strip of the bacon cutting off the access. Place the end of bacon wrapped hotdog on the dough log and and begin rolling the hotdog in the dough wothout overlapping the dough as you roll. Cut off the access dough once you’ve reached the end of the hotdog. Overlap and Pinch the end pieces and then placed them with the end/ seam side down on the baking sheet. Continue until all hot dogs have been wrapped.
Prepair the water and baking soda. Bring a large pot of water to a boil. Carefully add the baking soda and stir to dissolved. With a slotted spoon carefully add the pretzel dogs a few at a time to the water for 30 second. Remove from water and place back on Baking sheet.
Baking the Bites
Preheat the over to 425 degrees. In a small bowl add and beat one egg with a little water. Brush the bites with the egg wash and sprinkle the tops with a little pretzel salt. Bake for 15 minutes. Serve warm and enjoy.
