St. Patrick’s day is not typically a holiday that I make special food for. This year however I had an idea and I ran with it. What was that idea you ask? Why it was this pot of gold lemon ice cream of course. This ice cream is super simple to make. It’s also super delicious, creamy, and full of lemon flavor. No ice cream machine is needed and it only requires a few ingredients.

How to Make Pot of Gold Lemon Ice Cream

Begin by pouring the whipping cream into your and whipping until soft peaks form. Add the remaining ingredients and whip up till combined. Pour mixture into your container. Place in the freezer until it solid enough to scoop. Scoop into the mini cauldrons and top with gold sprinkles and chocolate coins. Serve with gold spoons and enjoy.

Cobbler of the plum variety


Ingredients

Scale

Biscuit Dough

  • 1/2 Cup Flour
  • 2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1 Tbsp. Sugar
  • 2 Tbsp. Milk
  • 3 Tbsp. Cold/ Frozen Butter

Plums 

  • 3 Large Plums
  • 2 Tbsp. Sugar
  • 1 Tbsp. Starch

Instructions

  1. Begin preheating over to 350°F. 

  2.  Season and preheat your cast iron pan*See Notes*

  3. Once the oven is set rinse and slice your plums.

  4. Add the sliced plums to a bowl and add sugar and corn starch. Stir until combined and set aside.

  5. In a large bowl add flour, salt, baking soda, baking powder, and sugar. Stir until everything in combined.

  6. Cut your butter into cubes and add to mixture. Using your hands or dough cutter incorporate the butter until it looks like coarse sand.

  7. Add milk and stir until a wet dough forms.

  8. To your pans divide the plum slices and place in a even layer.

  9. Spoon dollops of dough on top of the slices. Optionally sprinkle a little sugar on top of biscuit dough.

  10. Place in oven for 20 minutes. Remove from oven let cool and optionally add a scoop of ice cream.

  11. Enjoy.

Notes

  • to season pan lightly coat pan with oil I used canola oil. Place pans in oven to preheat while preparing your ingredients.
